Sous-Vide Caramelized Onions
-2lb sweet onions, sliced
-1 tsp salt
In a lightly oiled pan on medium heat, add onions and salt then saute the onions until just translucent (5-10mins). Allow to cool completely before vacuum sealing and adding to sous vide bath at 185F for 24 hours.
French Onion Soup
-1 tbs butter
-1 cup caramelized onions
-1 cup beef broth
-¼ tsp thyme
-1 bay leaf
-croutons and cheese of choice for topping
Bring all ingredients to a simmer for 5-10 minutes. Add to an oven safe bowl. Top with croutons/crusty bread, and cheese of choice (parmesan, gruyere, mozzarella, swiss). Broil at 500F for 4-5 minutes.
