For the Xató sauce
Roast three tomatoes and half a bulb of garlic for 20 minutes at 180 fan – except one garlic clove, which should be peeled and placed in a mini food blender raw.
Add to the blender 100g hazelnuts with the skin and 100g of blanched almonds and blend all until crunchy.
Now set this aside to clear space in the mini blender.
Add the roasted tomatoes, garlic, flesh of the ñura peppers, 3 tablespoons of black olive oil (ideally from Aragon but not essential), one desert spoon of raw apple cider vinegar, half a teaspoon of himalayan rock salt and blend into a smooth paste.
Now add the nut mix and roughly blend for a few more seconds to combine.
Add some of the water from the peppers as required to make a smooth sauce.
For the salad:
Tear into chunks the endive salad leaves
Sprinkle over your salted cod, 5 roughly chopped jarred artichokes, 30g of black olives, one tin of tuna with its olive oil, one tin of anchovies also with its oil and now add the ZatSalad endives (crisp curly salad) anchovies, tuna cod and spoon over some xató sauce.
Finally, sprinkle over chopped spring onions

The celebration of the feast of Corpus Christi at Sitges happens every year in spring. The highlight of the festivity takes place on the feast day itself, when the local residents create carpets of petals from carnations and other flowers. A jury awards prizes to the best carpets. Later, the procession of the Holy Sacrament passes over these works of art. The Corpus Christi festivities also include other the National Carnation Exhibition, the Bonsai Exhibition, the Floral Decoration of Façades and Balconies Competition and the Giants Parade.
