This nice little recipe is taken from the French household guide book „Le ménagier de Paris“ from 1393. It proposes several different varieties of waffles, but I couldn’t help but trying this cheese & wine version, which is really tasty, by the way. (Let me know if you agree!)
I am using a modern electric waffle maker, but if you are a purist and have those old-fashioned irons at hand that they would have used in the Middle Ages, please use them.
