INGREDIENTS:-
5 Salmon fillet
1/2 tsp salt
1/2 tsp pepper
1 Tbsp. fresh Thyme

For the sauce-
2.11 oz butter(dairy or non dairy is fine)
3 Tbsp. olive oil
2 leeks, chopped (only white part)
1 carrot, sliced
2 parsley roots, thinly chopped
4 celery stalks cliced
4 large garlic cloves, sliced
1 tbsp fresh thyme
1/2 tsp salt
1/2 tsp pepper
1/2 -1 cup dry white wine
1+1/2 cups heavey cream

To serve-
1/2 cup fresh chives to decorate
1 red bell pepper, small cubed
