Recipe and preparation:
Quail, salt, pepper, oil.
Fry for 3 minutes on both sides.
Butter, onion, carrot, celery.
White dry wine, salt, pepper, water.
Simmer for 45 minutes on low heat.
Make puree from vegetables.
