What we eat, and where we choose to dine, is a reflection of who we perceive ourselves to be and how we want others to see us. It speaks of our values, our politics, our social and economic class, our education and, of course, we all would like to believe we have good taste and can recognize and appreciate “authentic” cuisine, prepared well. But, who decides what is and is not “authentic,” food, and how do we decipher an authentic dining experience from an inauthentic one? Holly Fann is an experienced food writer and restaurant critic. Graduate of The Culinary Institute of America and former chef and chef educator. Food journalist and food photographer with substantial experience in newspapers and magazines as well as online publications.
