Sugar – 500 grams/1 lb 2 oz
Butter – 2 Tablespoons

For the Sponge Rolls

Caster sugar – 150 grams/5½ oz
Flour – 150 grams/5½ oz
Baking Powder – 1 teaspoon
Salt a pinch

For the Bavarois

Gelatine – 3 envelope/ 9 leaves
Raspberries – 550 grams/1 lb 4 oz
Raspberry liqueur – 2 tablespoons
Full-fat milk – 600 ml/20 fl oz
Egg yolks – 8
Caster sugar – 100 grams/3½ oz
Double cream – 450 ml/16 fl oz
Small strawberries – 100 grams/3½ oz

To decorate

Caster Sugar – 75 grams/2½ oz
Arrowroot – 1 tablespoon
Double cream – 150 ml/5 fl oz
Icing sugar – 25 grams/1 oz
Medium strawberries – 10
