1. Here’s my personal recipe for a Las Vegas Breakfast Burrito;
Ingredients:
6 large eggs
10 oz. Mexican chorizo spicy pork sausage
1 large white potato
1 medium white onion
1 small bunch spring onions
1/2 cup chopped bell pepper
1/4 cup chopped jalapeno pepper
1 cup queso cheese
4 flour tortillas
1 cup fries
Instructions:
Peel and dice the potato into small cubes. Heat a skillet over medium-high heat and add the diced potatoes. Cook until golden brown and crispy, stirring occasionally.
Remove the potatoes from the skillet and set aside. In the same skillet, cook the chorizo until browned, breaking it up into small pieces as it cooks.
Add the chopped onion, bell pepper, and jalapeno pepper to the skillet with the chorizo. Cook until the vegetables are tender.
In a separate skillet, scramble the eggs until cooked through.
Warm the tortillas in the microwave or on a skillet.
Assemble the burritos by placing a tortilla on a plate. Add a spoonful of the chorizo mixture, a spoonful of scrambled eggs, a handful of fries, and a sprinkle of queso cheese.
Roll up the burrito, tucking in the sides as you go.
Serve hot and enjoy!

Layer these French fries with cheesy bacon-eggs (note, not eggs-bacon – more bacon the better!), on a tortilla, lightly toast the burrito in a skillet then smother the burrito in creamy salsa, and extra pico de gallo if you like, and we have a California Breakfast Burrito to rival Robertos, Albertos, Aiberto, Aldebertos, Eribertos….or any kind of “tos.”

BREAKFAST BURRITOS WITH FRENCH FRIES
Preheat oven to 400 degrees.
Line a baking sheet with aluminum foil; spray with non-stick cooking spray.
Cut the potatoes into thin fries and toss with French fry ingredients in a large bowl until evenly coated.
Spread potatoes evenly over prepared foil and bake for 20-25 minutes, or until tender, then broil fries until golden and crispy
