We’re headed back in time to celebrate one of our favorite OG food influencers and French cuisine.
We’ll start with an aptly named “French Escort” cocktail. We’re elevating a favorite bar shot just a bit by giving it some fizz with pineapple soda. We’ll keep the innuendo in tact, we promise!
For the main dish, we’ve been inspired by Dione Lucas’ 1947 Cordon Bleu Cookbook. Her original recipe for “Filet de Sole Florentine” may be a little intimidating, but we’ve broken it down and adapted it for the modern kitchen and for the home cook – even the novice.
We’ll start by baking the fish in a wine sauce. Then we’ll use the leftover liquor to make a velvety smooth sauce with cream and spinach. This, along with bits of tender lobster will cover our fish. The final step… it all goes under the broiler to get toasty brown. Serve this dish with a vinaigrette-dressed green salad to balance the richness.
