Poulet Coco is a very simplified version of a curry. It comes together so quickly, and it’s not spicy, though, you can make it spicy if you like! I kept mine simple since the kids were eating it, too. This is a recipe I learned from my mother-in-law. I don’t know if it’s necessarily French, but it’s also not Indian. Some fusion of the two. It’s a great weeknight meal, and it freezes well. I’ve made it in a crockpot for crowds, as well! Hope you enjoy!

Poulet Coco Recipe:

Ingredients:
1 lb. chicken breasts cut into pieces
2 Tablespoons Coconut oil
Small onion
15 oz can of tomatoes
15 oz can of coconut milk
1/2 teaspoon of curry powder
1/2 teaspoon of powdered ginger
Dash of cayenne pepper
Salt

Directions:
Salt the chicken. Brown chicken pieces in coconut oil or a neutral oil over medium high heat. Remove chicken and sautée onions. Add tomatoes, coconut milk, spices, and the chicken to the pot. Stir well, reduce heat, and cover to let simmer for about 10 minutes or more if you have the time. I usually let mine simmer for about an hour. Serve with your rice of choice and a veggie like roasted cauliflower!
