Let’s cook a Christmas holiday recipe! With a tasty twist…

Welcome back to #TheWinoDiaries! In this episode we cook an adapted Bon Appétit noodles recipe, authentic Sichuan Dan Dan Noodles (also spelled Szechuan) recipe by Peter Chang, but with a vegan recipe twist using smoked shiitake mushrooms instead of ground pork. We are drinking an orange wine which pairs well with these noodles, and update you on our lives. Grab your favorite beverage and kick back for a Christmas and New Years holiday cooking show!
INGREDIENTS:
• 8oz noodles (we bought chengdu noodles from H Mart in Manhattan)
• 2TBSP vegetable oil
• salt and pepper to taste
• 12oz chopped shiitake mushrooms (we smoked them in a smoker but you can use them as normal)
• 2TBSP red wine vinegar
• 2TBSP chopped peeled ginger
• 3/4C vegetable stock
• 2TBSP (or less) chili oil
• 2TBSP soy sauce
• 1tsp sichuan peppercorns
• 4tsp sesame paste/tahini
• 2TBSP roasted peanuts
• 2TBSP thinly sliced scallions
INSTRUCTIONS:
1. Chop mushrooms, peanuts and scallions
2. Heat 2 TBSP oil on medium high heat, add mushrooms and stir for a few minutes until browned
3. Add stock and bring to a simmer, then add rest of ingredients (minus peanuts and scallions) and cook on low-medium for 5 minutes
4. Boil water in a separate pot and cook noodles for 3 minutes or according to package instructions
5. Drain noodles, plate by adding noodles, then top with the shiitake mushroom mixture and garnish with the chopped roasted peanuts and chopped scallions
6. Enjoy!
