Ingredients for making Potatoes Aligot (Cheesy Mashed Potatoes):
.75 lbs Yukon gold potatoes
1/2 stick of butter
200gr gruyere cheese
200gr mozzarella cheese
Salt and pepper
1/2 cup heavy cream

Instructions for making Potatoes Aligot (Cheesy Mashed Potatoes):
– Peel and cut potatoes into like sizes.
– Boil and season with salt until tender.
– Mash the potatoes.
– Add the room temp butter, mix well.
– Add heavy cream and mix.
– Add the cheese in a couple batches.
– Stir with wooden spoon consistently until the potatoes take on a starchy, taffy-like consistency.
– Season with salt and pepper and fold into aligot.
– Keep in the pot at a warm temperature to serve.
