WHITE BEAN SALAD
Ingredients
– 2 Cups White Beans, cooked
– 1 Cup chopped Bell Pepper
– 1 Cup chopped Cucumber
– 1 Cup cubed fresh Tomato
– 2 Celery stocks, sliced
– 2 Tbsp Fresh Chives, chopped
Or 1/2 red onion finely chopped
Dressing
– 3/4 Cup Olive Oil
– 1/4 Cup White Wine Vinegar
– 1/2 Tbsp Dried Oregano
– 1/2 Tbsp Dried Basil
– 1 Tbsp Grainy Mustard
– 1 Garlic Clove, minced
– Juice from half a lemon (1 Tbsp)
– Pinch of Salt
Instructions
1. Place all prepared veggies in a bowl.
2. For the dressing, I love to put all the ingredients in a mason jar with a lid and to simply shake it all together. You can put all ingredients in a bowl and whisk it all until nice and smooth.
3. Pour the desired amount of dressing on the salad. You will not need all of the dressing at this time. If you want to keep some salad for the next day, you may want to keep the dressing out until ready to serve.
