Ingredients:
Chicken Seasoning Ingredients
2 Tbsp. extra virgin olive oil
1 tsp sea salt
½ tsp. fresh cracked black pepper
1 tsp. garlic powder
1 tsp dried thyme
1 tsp dried oregano
1 tsp. dried parsley
French Onion Ingredients
4- 6 Omaha Steaks Butcher’s Cut Chicken Breast
2 Tbsp. extra virgin olive oil
2 ½ large yellow onions, sliced thing
4 cloves of garlic, grated
1 large shallot
4 Tbsp. butter
½ cup white wine
2 cups beef broth
1 Tbsp. Worcestershire sauce
4 sprigs fresh thyme
2 tsp. sea salt
1 tsp. fresh cracked black pepper
2 cups Gruyere cheese
Directions:
1 Preheat the oven to 350°F.
2. Remove the chicken from packaging and pat dry. Cover with extra virgin olive oil and season with chicken seasonings listed above.
3. Cook in large Dutch oven over a medium flame for 2 and a half minutes per side.
4. Remove the chicken from the pan and add the olive oil and heat.
5. Then add the onions. Cook stirring on a regular basis for 15 minutes to caramelize.
6. Add in the garlic, shallot and butter. Cook another 10 minutes stirring regularly.
7. Add the white wine and deglaze the pan. Cook for 3 minutes, scraping the brown bits from the bottom. Then add 2 cups of beef broth and the Worcestershire sauce.
8. Add in the thyme and stir. Simmer 5 minutes on low.
9. Add the chicken back in, cover and bake for 15- 20 minutes.
10. When done, add on the Gruyere cheese and cover with the lid to melt it. Add additional thyme, sea salt and pepper to taste. Serve over potatoes (mashed or otherwise).
