Chicken Fricassee Ingredients:

Chicken Quarters – 2 1/2 lbs., chopped
Crimini Mushrooms – 1 1/2 lbs., chopped
Yellow Onion – 1 mid. diced
Garlic – 8 cloves, chopped
Heavy Cream – 1 cup
Chicken Stock – 1 1/2 cup
White Wine – 1/2 cup
Olive Oil – 2 tbsp.
Butter – 4 oz.
Flour – 2 tbsp.
Ground White Pepper – 1/2 tsp.
Thyme, Oregano, Rosemary- 1 tsp. Dried
Bay Leaves – 2 each
Salt – to season
Italian Parsley – 3 sprigs, chopped

A Fricassee is a Classic French dish made usually with chicken, rabbit or veal. The meat is seared in some fat then simmered in gravy and thickened with cream and/or egg yolk. You might find that there are many variations out there. Probably because this dish goes far back as the medieval period and Chefs had to use any ingredients at hand. Some like to make it with other veggies like carrots or parsnips. I like cooking it with mushrooms but don’t let this intimidate you because the process and ingredients are super easy.
