Earlier this year, as part of the 50 Best Signature Sessions for #Asias50Best Restaurants 2023, sponsored by S.Pellegrino & Acqua Panna, chef Ricardo Chaneton of Mono in Hong Kong headed to Julien Royer’s Claudine in Singapore to collaborate with executive chef Julien Mercier and head chef Loïc Portalier, to serve guests lip-smacking dishes which celebrated both French produce and Latin American flavours.
Diners enjoyed dishes such as Sweetbread & Morels Empanada Green Mole, Brittany Monkfish A La Brasa, Mussels Taco & Chimichurri and Citrus, Basil Sorbet, Bergamot Pavlova.
