Ingredients:
1 1/2 – 2 lbs. boneless, skinless chicken breast, thin cut, pounded out
2 eggs, plus 2 tablespoon milk, beaten
1 cup flour
1 tablespoon salt
1 teaspoon black pepper
2 tablespoon olive oil, plus 1 tablespoon butter for sautéing
For the sauce:
Juice of 1/2 lemons
1/2 cup good white wine or dry sherry
1 cup vegetable broth or chicken stock
4 tablespoon cold butter, cut in cubes
1 tablespoon chopped Italian parsley
salt and fresh ground black pepper to taste
