7 medium size onions. I used a variation.
Oil 2 tbsp and butter 1/4 cup
Thyme
4 cloves of garlic
2 tbsp of cognac
1 cup of white wine. Allow alcohol to evaporate then add stocks.
3 cups of beef stock
3 cups of chicken stock
Heavy Whipping cream 1 tbsp
Balsamic Glaze 1/2 tsp
Gruyere cheese
