Lunadoro’s Pagliareto vineyard is situated on the crest of a hill. September winds dry the grapes from the night’s dew and make it possible, when October has begun, to harvest when perfect phenolic ripeness is reached. Something, this, that gives the wine a distinct tannic sweetness and extraordinary longevity. The harvest is carried out in a strictly manual manner, followed by the selection of berries and then vinification in temperature-controlled tanks with gentle pumping over. In December, the wine is transferred to 12 French oak tonneaux, each with distinctive characteristics, thanks to which 12 wines with unique nuances will be obtained. After 30 months have passed, a sampling is prepared for each tonneaux for the customer (12 samples of 60ml for each kit), who can choose the wine from the tonneaux he or she prefers, becoming its exclusive owner.
