There’s nothing really French about it, but I was feeling very continental so went with it. Utterly delicious, surprisingly cheap and even the kids ate it (don’t tell them about the lentils – I went with ‘lumpy sauce’ that seemed to satisfy their fork poking enquiries..). So how’d ya make it? C’est bon – let’s go!

Brown some sausages in a large pan and throw a diced onion in; cook for five minutes.
Add a chopped clove garlic and pour in a glass of red wine. Simmer, to reduce by half.
Add a pinch of Herbs du Provence (mixed herbs to you and me) a squeeze of tomato purée, handful baby toms, sprinkle over a tbsp flour, season and mix together.

Go in with about 400ml (a large mug is about right) of chicken or beef stock (use a cube..). Stir and let simmer.
Add packet precooked lentils, simmer another few minutes. I use @merchantgourmet (not an ad just very good).
Turn off heat, serve on mash and veg of choice!
Voila! As they say in Hertfordshire 🙂
