The first pasteurization test was conducted by Louis Pasteur in 1862. At the time, the French wine industry was facing a crisis as many of their wines were spoiling due to the activity of harmful microorganisms. Pasteur was approached by a local wine producer who sought his assistance in finding a solution to this problem.
Pasteur hypothesized that heating the wine to a specific temperature would kill the microorganisms that were causing the spoilage. He conducted an experiment in which he heated a batch of spoiled wine to a temperature of 55-60°C (131-140°F) for several minutes. The wine was then allowed to cool and was stored for several months. Pasteur observed that the wine did not spoil during this time, indicating that the heating process had been successful in eliminating the harmful microorganisms.
