Malabar Goose Curry is my culinary tribute to the Christian Community of the Malabar coast of India, who trace their origins to St. Thomas, the Apostle. This is an amazing goose curry, perfect for Christmas and uses some very flavourful spices that are grown in the Malabar region. The recipe requires a bit of effort and is slightly time consuming but the results are delightful. The most difficult part for me was in skinning and cutting the goose at home. So, my advice to you is that if you are intending to cook this curry, ask your butcher to do that difficult task for you. This Christmas give this recipe a try and enjoy!
