With a few key ingredients such as chicken, bacon, onions, garlic, carrots, red wine, and chicken broth. You won’t need any fancy equipment, just a Dutch oven or any heavy-bottomed pot will do.
The result is a rich and flavorful dish that will impress anyone who tastes it. I like to serve it over a bed of mashed potatoes or polenta.

Recipe
4 chicken thighs/breasts (skin on bone in if possible)
1 ½ onions
4 cloves of garlic
1 large carrot
1 small bunch parsley
1 lb bacon or pork belly
½ cup tomato pure
1 cup red wine
2 cups chicken broth
2 Tbsp cornstarch + 2 Tbsp water for slurry
Salt
Black pepper
Herbs (rosemary and thyme)
