Equipment required:

Dutch Oven
Ovenproof serving bowls
Baking sheet
Preparation time: 15 minutes

Cooking time: 1 hour and 30 minutes

Directions:

Saute onions in a Dutch Oven with butter until they are tender. This should take about an hour on low heat.
Stir in flour until the mixture is smooth. Gradually add chicken broth, beef broth, water, and wine. Bring the mixture to a boil and then reduce the heat and let it simmer for 15 minutes. Add pepper to taste.
Place 8 ovenproof serving bowls on a baking sheet. Put 1 slice of toasted bread in each bowl and ladle the soup over the bread. Top each bowl with a slice of mozzarella cheese and sprinkle lightly with parmesan cheese. You can use any kind of cheese.
Broil the bowls in the oven until the cheese is melted and golden brown. Be extremely vigilant during the broiling process as it only requires a few minutes. If you’re not cautious, it may end up burning. Serve hot.
Cooking tips: Use a sharp knife to thinly slice the onions for the best texture. Be sure to keep an eye on the soup while it simmers to prevent it from boiling over.
