Dry aged N.Y Steak with French fries and Chimichurri sauce 🔥💯

Ingredients
Dry Aged NY Strip 10oz
Yukon Potatoes 3
Canola oil 1lt
Salt to taste
Pepper to taste
Chimichurri sauce
Fresh Parsley generous amount
Dry Oregano 1 tbsp
Garlic 1 Clove
Shallot 1 small
Fresh chilly pepper 3 small
Extra virgin olive oil 150ml
Red Wine vinegar 100 ml
Directions
Marinate meat and sous vide at 118f for 1h.
Cut potatoes and boiled them in 2lt of water and 30 ml of vinegar.
Cool them down and fried them twice at 400f in peanut oil.
For the Chimichurri sauce, chopped everything small and mix it together. Let it sit in the fridge for at least 20 minutes.
Open sous vide bag, pat dry meat, and sear it on each side on a hot pan for 2 minutes on each side. Serve and enjoy.
Wine pairings for this recipe is really up to you, my top suggestions are: Nebbiolo, Sangiovese, Pinot Noir
