This most delicious Rack of Lamb aka Crown Roast is tender and flavorful. It is like a Rolls Royce of lamb. Once you have cleaned aka as Frenched, it is easy to prepare. Just follow the steps and tips for cleaning it and you will be good to go.
This is a three-part video showcasing how to prepare the Rack of Lamb from the start to the end:
1. Frenching it: ‘Frenched’ means to remove all the excess meat, fat, and cartilage from the bones of your rack. Stripping the meat away is done for aesthetic purposes.
2. Searing, Roasting, and Stuffing it with a very delicious Feta, pomegranate, mint, and parsley Stuffing and herbs that go well with lambs like rosemary, and thyme. This rack of lamb is basted with Dijon mustard which helps tenderize the meat and produce crust. If you do not like Dijon mustard as it is strong or pungent, try these mild options: Stone-Ground Mustard or Yellow Mustard or Homemade Dijon mustard.
You do not need to add breadcrumbs as I have done to make more stuffing. Feta will stick the stuffing to the meat.
3. How to make a quick flavorful gravy to accompany your meat.
This slightly sweet Crown Roast is served with roasted carrots and very flavorful gravy.
TIP:
– The easy way is to use a sharp knife and make sure that your meat is fresh and must be very cold to peel easily.
– By the time you finish cleaning the meat it should be at room temperature to roast more evenly.
The eye of the loin is the side round meaty part on the side of the rack.

3. A sharp knife to use, one like a fillet knife because it is narrow
