“De La Burbe” Salad Recipe
Ingredients:
1. 500 grams/17.6 oz. of Chicken Liver
2. 4 slices of Baguette (1 cm/0.4 inches thick)
3. 2 medium sized tomatoes
4. 2 cloves of garlic
5. 100 ml. of Cognac or Brandy
6. olive oil
7. 50 grams/1.7 oz. of butter
8. salt and pepper

1. Cut 2 X 2 cm/0.7 X 0.7 Inch pieces from 500 grams /17.6 oz. of cleaned chicken liver. Fry it on olive oil and 50 grams /1.7 oz. of butter for 7 minutes at medium temperature.
2. Add salt and pepper to the liver. Then, add 100 ml of Cognac or Brandy and fry for 3 minutes at medium temperature.
3. Put 4 pieces of baguette into the toaster. Cut 2 tomatoes into 2X2 cm /0.7X0.7 inch pieces. Put the tomato into the bottom of 2 bowls.
4. Chop finely 2 cloves of garlic. Put on top of the tomato.
5. Cut the toasts from baguette into 4 pieces. Put it on top of tomatoes into 2 bowls.
6. Put hot, fried, liver as the last layer into the 2 bowls. Pour the liquid, in which it was roasted, on top of it. Add salt and pepper according to your preference.
