This sophisticated, velvety version of a classic skillet dinner goes great with mashed potatoes or a mountain of fluffy white rice. Instead of using the more conventional white wine, this fricassee is cooked with dry vermouth, an aperitif, which yields a somewhat sweeter and more fragrant sauce. White wine, though, will also function. The traditional French comfort food, chicken fricassee, is just exquisite. Although it may appear gourmet, this all-in-one meal is made with simple ingredients and can be prepared in just one pot for a quick dinner every night of the week.
