Salut! Today I will be preparing 2 versions of a classic French salad Nicoise! The first version being a simple version you could make for a tasty lunch with the other version being a posher version more suited for a dinner party setting!
Salad Nicoise – 2 ways!
Quick version:-
French Beans (Blanched)
Red Onion (Sliced)
Tomatoes (Sliced)
Cucumber (Sliced)
Tin of Tuna
Hard-boiled Egg
Mediterranean Olives
Anchovies
Capers
For the vinaigrette:
Olive Oil x 3 tablespoons
Red Wine Vinegar x 1 tablespoon
Dijon Mustard x 1 teaspoon
Salt & Pepper
For the posher version:-
Tuna Steak
Red Peppers (Chargrilled – skins off)
Baby Gem Lettuce (Chargrilled)
Hard-boiled Egg
Mediterranean Olives
Anchovies
Capers
Tomatoes (Sliced)
Cucumber (Sliced)
For the vinaigrette:
Olive Oil x 3 tablespoons
Red Wine Vinegar x 1 tablespoon
Dijon Mustard x 1 teaspoon
Salt & Pepper
Plus basil (whizzed in the processor!) if required
