Ingredients:

1 egg yolk
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
1 cup neutral oil (such as vegetable or canola oil)

Instructions:

1.In a small mixing bowl, whisk together the egg yolk,
Dijon mustard, and white wine vinegar until fully
combined.
2.Begin to slowly drizzle in the oil while whisking
continuously. It is important to add the oil gradually
and to whisk constantly to emulsify the mixture.
3.Keep whisking and drizzling the oil until the
mayonnaise becomes thick and glossy.
4.Season the mayonnaise with salt and pepper to taste.
5.Transfer the mayonnaise to a container with a lid and
refrigerate until ready to use. The mayonnaise will
keep for about a week in the refrigerator.

Note: If the mayonnaise is too thick or too thin, you can adjust the consistency by adding more oil or a splash of water, respectively. Additionally, you can add other seasonings or flavorings to the mayonnaise such as garlic, lemon juice, or herbs to suit your taste.
