To freeze aloo chips (potato chips) for a long time, follow these steps:
Wash and peel the potatoes. Using a mandoline or a sharp knife, slice the potatoes into thin, even slices.
Soak the potato slices in cold water for at least 30 minutes to remove excess starch. Drain the slices and pat them dry with a clean towel.
In a large bowl, mix the potato slices with a tablespoon of oil to coat them evenly.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Spread the potato slices in a single layer on the baking sheet, making sure they are not overlapping.
Bake the potato slices in the preheated oven for 10-12 minutes or until they turn golden brown.
Remove the baking sheet from the oven and let the potato chips cool completely.
Once cooled, transfer the potato chips to an airtight freezer-safe container or a resealable plastic bag.
Label the container or bag with the date of freezing and store in the freezer.
The potato chips can be stored in the freezer for up to 6 months. When you’re ready to enjoy them, simply remove the desired amount from the freezer and let them come to room temperature before serving. You can also reheat them in the oven or microwave for a few seconds to restore their crispiness.
