We have been ‘good’ since Christmas and it is now mid February… There was only a tiny bottle of white wine in the house, left over from cooking fish in the week.
A sorry mango was crying in the fruit bowl and we hadn’t eaten the half price raspberries from yesterday either.
It was just the perfect storm for a sabayon!
Ingredients
Any fruit, even tinned
3 egg yolks
30gr caster sugar
150ml white wine, any white wine! It even works with Prosecco or Champagne!
