Ingredients:
1 cup / 125 grams of flour
½ tsp. salt
2 eggs
1¼ cup of 310 ml milk
2 tablespoons melted butter + additional for cooking
Instructions :
STEP 1.
In a medium sized bowl, whisk together the flour and salt.
In a separate smaller bowl, whisk together eggs and milk.
STEP 2.
Pour the wet ingredients into the bowl with the dry ingredients, ¼ at a time, beating until smooth.
Pour the melted butter into the pancake batter and whisk until combined.
Cover the pancake batter with plastic wrap and place in the refrigerator overnight or, if time is limited, for 1 hour.
STEP 3.
Heat a large frying pan or pancake maker over medium heat. Grease the pan with melted butter and pour in about ¼ cup of the pancake batter. Use a pancake tool or tip the pan to evenly distribute the batter.
STEP 4.
Cook the pancake for 30 seconds to a minute or until the top is browned, flip the pancake with a spatula or your hands and cook another 30 seconds on the remaining side.
STEP 5.
Serve the pancakes with your favorite toppings.
