In this video I will show you how I make my Chicken with Porto-Wine Sauce over French Fries. Unique flavors for a unique recipe, it is as delicious and sophisticated as it sounds. Beautiful dish and you will be very proud to serve it to your family or friends.

Ingredients for the Chicken:
4 pounds or about 2 kilograms of boneless and skinless chicken breasts
5 ounces or 154 grams of shredded Parmesan Cheese
8 ounces or 233 grams Mushrooms
4 tablespoons (2 ounces) or 56 grams Unsalted Butter cut in pieces
2 cups or 473 mL Beef Broth
2 to 3 cups or 473 to 709 mL Porto Wine (Porto wine is a sweet red fortified wine from Portugal)
3 tablespoons or approximately 26 grams Corn Starch mix with 3 tablespoons or 44 mL water
1 large Onion cut in thick rings
3 red, orange and yellow, small Bell Peppers

To season the Chicken:
¼ cup or 60 mL Olive Oil
6 to 8 mashed Garlic Cloves
Salt and Pepper to taste

Ingredients for the French Fries:
10 to 12 red medium Potatoes cut in square pieces
2 cups or 473 mL Vegetable Oil
½ cup or 113 grams Salted Butter

Prepare:
1. Slice the chicken breasts in halves. Place the inside a zip bag and flatten it with a meat pounder.
2. Season the chicken with the Olive Oil mixed with the garlic, salt and pepper.
3. Clean the mushrooms with a wet cloth or paper towel; and slice them.
4. Peel and slice the onion in thick rings.
5. Slice the bell peppers.
6. Wash, remove stumps, and cut the potatoes in squares. Put the potatoes in salted water for 10 to 15 minutes. Drain the water completely.
Fry the Potatoes:
7. In a big frying pan, pour the vegetable oil and the salted butter. Let it heat y HIGH temperature. When the butter start bubbling add the potatoes, cover, lower the temperature to MEDIUM, and let them fry until golden brown. Turn over when the bottom is golden brown.
8. Remove from the oil when completely golden brown.
Prepare the wine sauce and the chicken:
9. While the potatoes are frying, in a non-stick skillet, heat about 1/3 portion of the butter and sauté the onions with the peppers and the mushrooms.
10. When the vegetables are tender, remove from the pan.
11. In the same skillet, cook the chicken until slightly brown. Remove from the pan when done.
12. In the same skillet, pour the wine, let it boil and reduce about one-third (alcohol will evaporate).
13. Add the vegetables to the wine.
14. Add beef broth.
15. Mix the corn starch with the water.
16. Add the corn starch mixture to the wine and vegetables.
17. Add salt to your taste.
18. Let the wine sauce thicken.

Place the French fries on the plate. Place a slice of chicken over the potatoes. Spoon the sauce over the chicken with plenty of mushrooms and vegetables.
