A creamy cold potato salad with a made-from-scratch mayo that everybody will love on any occasion. Perfect as a side dish or even as a snack with a piece of toast.

Ingredients for 4 people:
4 large potatoes (boil it in advance with skin on, then let it cool down, peel and cube)
½ celery root cubed and cooked (if you can’t find one in your local store, it can be skipped)
1 pkg (about 10-12 oz of frozen peas with cubed carrots (steamed)
1 large apple peeled and cubed
3-4 pieces of pickles chopped
A small piece of red onion finely chopped (2-3 tablespoons)
For the mayo:
2 egg yolks
2 teaspoons of mustard
Juice of half a lemon
1 tablespoon of plain yogurt
Salt & pepper
1 cup salad oil
Put the salad ingredients in a large bowl. Whip the first five mayo ingredients on the list together and add the oil gradually until it thickens. Carefully fold the veggies into the mayo and readjust the taste if needed (I had to add some more mustard and salt to my taste). Refrigerate for a few hours for the flavors to marry. It can be prepared the night before as well.
