winter time always means piping hot soup. tons of onions from the farm, crispy bread, and lots of gruyere. be careful not to burn yourself with this soup.
3lbs of mixed onions
1 stick of good quality butter
3/4 cup good quality red wine
3 tbsp salt
1 tbsp black pepper
3 tbsp olive oil ( if needed)
2 bay leafs
3 thyme sprigs
homemade or store bought beef stock, enough to cover the soup and not be to thick
top with toasted bread of your choice and gruyere cheese
