French Beef Stew | Beef Bourguignon
(Mise En Place)

2 lbs cubed stewing beef
1 large onion
3 stalks celery
3 carrots
1 bottle of red wine 750ml/3 cups
2 tbsp Parsley
2 tbsp Thyme
2 tbsp Rosemary
2 tbsp Minced Garlic
1 tbsp Tobasco
1 tbsp Worcestershire sauce
3 bay leaves
Salt and pepper to taste
2 tbsp concentrated beef stock
2 tbsp tomato paste
1lb quartered mushrooms

Mashed Potatoes
9 medium Russet potatoes
2 cups of milk
1 stick of unsalted butter
Salt and pepper to taste
2 cups of hand-shredded smoked gouda cheese
