Welcome to episode 4 of my SOUP OF THE WEEK series where every Thursday night at 7pm GMT I release a brand new soup recipe just for you. This week I’m making French Onion Soup and this is how you do it 👇🏻

French Onion Soup

Serves 4

1kg x Brown onions
8-10 x Sprigs of Thyme
2 tbsp x Olive Oil
2 x Cloves garlic (Crushed)
250ml x Dry White Wine
1.5ltr x Beef Stock
Salt + Pepper (to taste)

Cheese Croutons

8 x Slices of Baguette
500g x Gruyere (or any melting cheese)
Olive oil

1. Begin by thinly slicing all of the onions. Place a large pan over medium heat and add 2 tablespoons of olive oil followed by a big pinch of salt.

2. Slowly cook the onions down until they have caramelised and reached a dark brown colour. This will take 45 minutes to 1 hour.

3. Next, add in the sprigs of thyme followed by 250ml of dry white wine. Turn the heat up and cook until the wine has reduced by half the amount.

4. Once the wine has reduced, add in the beef stock and simmer for 15 minutes.

5. To make the cheesy croutons, place the baguette slices onto a baking tray and brush on both sides with a little olive oil. Toast under the grill or in the oven at 190°C until crisp and golden.

6. Check the seasoning of the soup before serving and adjust with salt and pepper if you need.

7. To serve, ladle the onion soup into heatproof bowls and place one or two croutons on top, load them up with cheese and place the bowls under a hot grill until the cheese has melted.
