Recipe:
1 to 2 onions diced ( red, yellow or white)
2 to 4 cups of broth ( beef, chicken or vegetable)
1/2 to 1 cup of French Wine ( white or red)
1 teaspoon of each, black pepper, salt, garlic powder, onion powder, basil and/or oregano.
Olive oil or oil of your choice
French bread or a thick bread
Shredded cheese
In a medium pot coat bottom of pot with oil on medium to high heat. Add your onions and cook beyond translucent to about almost done. Then add your broth, wine and seasonings and bring to a boil. Once it is to a boil bring back down to a simmer for 20 to 30 minutes so that all the flavors come together. When the soup is about done take a slice of bread and toast it. Put enough soup into a ceramic bowl or a oven safe ramekin. Place toasted bread on top of the soup and add the shredded cheese on the bread. Place under the boiler until cheese is melted. Server hot or let it cool down just a bit not to burn your mouth. It is so yummy and delicious.
