Ingredients
2 fillets mahi mahi
1/2 lb fresh green beans
1 teaspoon ground mustard
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/3 cup honey
1/4 cup aged balsamic vinegar
2 cloves garlic grated
3 tbsp olive oil divided
Instructions
Blanch the green beans in a saucepan of boiling water for about 5 minutes. Remove the green beans to a plate. Drain and dry saucepan for reuse.
Heat a separate grill pan or skillet on high heat. On a small plate, mix the ground mustard, salt and pepper. Pat the fish dry with paper towels and then season both sides of the fish with the mixture. Once skillet is heated, add 2 tablespoons olive oil to coat pan. Immediately add the fish and grill for five minutes on first side.
In the emptied (and dry) saucepan that you used to blanch the green beans, add 1 tablespoon oil and the garlic. Saute for about a minute. Then return the green beans to the saucepan, cover and simmer while fish continues to cook.
In another small bowl, add the honey and microwave for about 20 seconds. Once heated, mix in the balsamic vinegar. (The two mix easier once the honey is heated.)
Turn the fish and brush the cooked side of fish with the balsamic glaze. Cook second side of fish for about 4 minutes. Then flip again to glaze second side. Remove to plate.
Once fish is glazed on both sides, add remaining glaze to the green beans and allow to heat through. (Since brushing glaze on the cooked side of fish, no need to worry about cross contamination.)
