This recipe by Julia Child is truly amazing! Full recipe written below. It’s worth taking the time spent to get this just right, it’s French Onion Soup like I’ve never had before, really flavoursome & hearty and best thing it’s cheaper per serve than the dried French Onion Soup packets even with the cheesy croutes included!

How to cook Julia Child’s French Onion Soup Recipe :
Very finely shop 700g of onions
In a heavy saucepan, melt 45g of butter (or table spread to be cheap)
Add the onions and stir for a few minutes, then put the stove top on low heat and cook for 15 minutes, stirring occasionally
After 15 minutes, add a teaspoon of salt and 1/4 teaspoon of sugar and mix
Replace the lid and cook for another 30 minutes, stirring occasionally

In the meantime start making your croutes
Either use a french bread stick, chopped into approx 1inch slices (or homemade bread as I did!)
Put on a baking tray and brush both sides of the slices with oil (Olive oil is best but whatever you have)
Bake them in the oven for 30 minutes, flipping over half way through.

Once the onions have been cooking for 30 minutes, add 3 tablespoons of flour and mix in well
Add 6 cups of beef stock – homemade is always best but I just used Oxo cubes and it was still yummy.
Add 1/2 a cup of wine (either white or red works)
Add salt & pepper to taste
Replace the lid partially (leave a small gap for steam to escape) and let it simmer for 30 minutes

After 30 minutes give it a stir and add cheese – swiss cheese is best but I just used colby, and the recipe calls for 60g but I used more like 100g … because I like cheese 🙂
If you like, add 3 tablespoons of Cognac (I used whiskey as we had a small sample we never used). Last time we just left this out and it was still nice!

Place the croutes on top of the top and top with cheese, then put in the oven for 20 minutes at 180oC … then devour!
