600 g White onion
1 kg Red onion
2 Bay leaves
5 g Thyme
1 L Demi-glace
500 ml Red wine
70 g Butter
15 ml Olive oil
Gruyere cheese
Croutons OR Toasted bread
Black pepper and salt to taste
