Ratatouille is a classic French recipe, perfect for using up all those summer vegetables. Ramekins allow you to create beautiful rosettes, cut down on cooking time, and give each person their own little dish. Serve as a side or with a nice crusty bread and cheese plate.

RECIPE

STEP 1: Thinly slice zucchini, eggplant, and peppers (use a mandolin if you have it!) Chop some onion and garlic

STEP 2: Preheat oven to 375.

STEP 3: Spread some tomato paste on the bottom of each ramekin, adding a drop of water to thin it out.

STEP 4: Sprinke some chopped garlic and onion. Layer sliced eggplant, zucchini, and peppers in a circular pattern to make rosettes. Be sure not to overstuff!

STEP 5: Season with salt, pepper, and thyme. Drizzle some olive oil on top.

STEP 6: Cover each ramekin with parchment paper to prevent burning. Bake for 20 minutes or until tender.
