US expat Craig Carlson had been working on a TV series in Paris, and when it ended he knew he wanted to stay in the French capital. But it wasn’t until he was home in Los Angeles and ordered a wholesome American breakfast that he realised that was what Paris was missing, and he could put it right. So despite having no business-running credentials, or restaurant-running experience, he opened a diner, “Breakfast in America”, which has since become two diners in the city. He’s now also written a book entitled “Pancakes in Paris”. He joined us for Perspective.
