ClimateStory Ep. 13 – Reflet d’Obione – Montpellier, France
For ten years, French Chef Laurent Cherchie struggled with bad health. Visiting doctors all over the world, and trying various treatments – nothing seemed to help.
And then one day, his incredible wife, stumbled on the solution: The Chef was allergic to gluten, a protein found most commonly in grains.
Bread is everything in France. On a national holiday, banks and institutions are closed, but Boulangeries, or bakeries are open to meet the needs of the baguette obsessed population.
In this episode of ClimateStory, we discover how Chef Laurent created a whole new gluten-free cuisine, while overcoming his illness, and winning a Michelin Star along the way.
