Moules et frites or Mussels and fries is a Belgian/French dish. Perfect with a cold glass of wine.

Recipe:
For the mussels: Sweat shallots, celery, garlic, thyme and bay leaf with butter. Add 2 cup of white wine. Cook the alcohol off and add mussels. Close the pan with the lid for around 2mins or until the mussels open. Garnish with parsley.

For the Fries: Par Boil the cut potatoes (around 5mins). Then put the potatoes in the freezer for around 1 hour. Fry at 270F for 5mins. Place the potatoes back again in the freezer for 1 hour. Fry again at 350F until golden.
