If you love banana bread and love French toast, you’ll love this 5 Ingredient Vegan Banana French Toast!
That’s right, 5 ingredients. Six if you want a touch of vanilla. But it is not necessary!

You really want the banana flavor/sweetness to shine through anyway. Plus, it replaces a sweetener and an egg in this recipe. Bananas are seriously on the rise.
The dough is easy to mix. Simply mash your banana, add the other ingredients and wait while you preheat your plancha. Then dip, dip and bake! Watch as the edges turn golden and crispy. So seriously yum.
French toast

1 just-ripe banana (~1/2 cup mashed)
1 1/4 cup unsweetened almond milk

1/2 tablespoon flax seed meal
1/4 teaspoon cinnamon

4-5 slices of hearty wheat bread (heavy rustic loaves work best here. If using sandwich-type bread, soak less)
1/2 teaspoon vanilla extract (optional)
1 tablespoon almond flour (optional // for texture)
For the garnish (optional)
Maple syrup
Peanut Butter
Instructions
Mash the banana in a large shallow bowl.
Add almond milk, flax seeds, and cinnamon, and stir. If your dough seems extremely gooey, add more almond milk to thin it out. It should be runny. (Vanilla is optional.)
Let the batter sit for 5 minutes while you preheat your griddle or skillet over medium heat.
Once your surface is hot, coat liberally with vegan butter or coconut oil (I used Earth Balance because I like the flavor).
Dip your bread slices into the batter and let it sit for 5-10 seconds on each side, using your fingers to make sure it’s completely submerged. Immediately transfer to the griddle. An optional step is to dust the freshly soaked sides with a little almond flour for extra texture.
Cook 3 to 4 minutes on each side or until evenly browned. Flip carefully using a sturdy spatula as the banana mixture can be a little sticky if you’re not gentle. If your French toast seems to brown too quickly or burn, lower your griddle.
Serve immediately with desired toppings. I think peanut butter and maple syrup is all you need here.
