• Sushi rice:
• 1 1/2 cup sushi rice or any short grain rice
• 1/4 cup rice wine vinegar
• 1 tbsp sugar
• 1 tsp salt
• 1/4 cup salmon roe (toppings)
• furikake
• nori sheets

-Baked Negitoro Sushi
• 200g blue fin tuna
• 1/2 tsp light soy sauce
• 1/2 tsp sake
• 1/2 tsp mirin
• 1/2 tsp dashi
• 1/4 tsp sugar
• 1/2 cup japanese mayo
• 1/4 cup cream cheese
• Sushi rice:
• 1 1/2 cup sushi rice or any short grain rice
• 1/4 cup rice wine vinegar
• 1 tbsp sugar
• 1 tsp salt
• furikake
• togarashi
• sesame seeds
• black sesame seeds
• nori sheets

– Baked Volcano Shrimp & Scallops Sushi
• 300g shrimps
• 3/4 cup japanese mayo
• 1/4 cup sriracha mayo
• 1/4 cup cream cheese
• 1/4 cup salmon roe
• 1/2 tbsp sesame oil
• pinch of salt
• Sushi rice:
• 1 1/2 cup sushi rice or any short grain rice
• 1/4 cup rice wine vinegar
• 1 tbsp sugar
• 1 tsp salt
• 100g scallops
• furikake
• bonito flakes
• nori sheets
