Ingredients:
3 large eggs
1 ½ teaspoons water
⅛ teaspoon kosher salt
2 tablespoons unsalted butter
Recipe:
1. Add the eggs, water, and salt to a medium bowl. Whisk for 2 minutes. Let sit at room temperature for 15 mins.
2. Melt 1 tbsp of butter over medium-heat, pour the eggs and constantly move the spatula around in small circles for 1–2 mins.
3. Scrape the sides of the pan and after 2–3 mins more, reduce the heat to low and smooth the surface with the spatula.
4. Remove the pan from the heat and let sit for 1 min, then begin to gently roll up the side of the omelette, add ½ tbsp butter into the pan, then continue rolling.
5. Brush with the remaining butter, and garnish with green onions, parsley, sea salt, or chives, I used himalayan salt.
6. Bon appétit!
