A classic French dish of chicken braised in red wine with vegetables. Rustic but elegant! Easy to prepare. Cooks in one sauté pan!
Ingredients:
4 chicken thighs
4 chicken legs
4 slices of bacon
1 1/2 cups of red wine such as Cabernet (or any full bodied red wine)
1/4 cup Brandy or cognac
One Cup chicken bone broth
4 cloves minced garlic
Four medium carrots or one 12oz bag of baby carrots
one large onion
(8 oz Pearl onion optional)
2 tablespoons of tomato paste
8 ounce carton sliced Portobello mushrooms
4 teaspoons fresh thyme divided ( 2 teaspoons for cooking, 2 teaspoons or for garnish)
2 tablespoons of butter
2 tablespoons of flour or cornstarch
